You can go as easy as using termux, or as hard as using postmarketos. Plenty of guides online.

I did this. Made my phone solar powered too. It was a fun project. I would recommend using a phone that will auto turn on when power comes back.

Be careful with old phone batteries if you’re going to leave it somewhere plugged in for months
