I thought the point of TLS / SSL was that the ISP would see only encrypted data. They can still see the sites you visit (due to IPs) but not the full path.

Under normal circumstances, yes. But it’s not full proof. Also TLS leaks a lot of data that is not raw content, so most ISPs don’t bother going further.
I was under the impression that Starlink intercepted and read the data packets through MitM technique, but as far as I can see that is not the case now. Might have changed or I was misinformed in the past.

Even if it’s encrypted starlink (isp) can still use other information such as times, IPs visited, volume of data.
