I was a server, and this was never a problem and isn’t even a potential problem. I can’t even think of a time when I had to use someone’s third-person pronouns. You’re trying to create outrage over a problem that only exists inside the minds of bigots.

When in doubt, just don’t use pronouns or any terms referring to gender. Using the word “you” is pretty safe, especially when there is only one person at the table. When the server is talking to back of house, they generally refer to people by table. The cooks don’t know or care who’s actually eating the food, they just know the ticket/table number.
